I'm using Maas polish and plain cotton, like out of a tshirt, to polish my VG10 Centofante 4. I figure, if I really want to get the scratches out, I should apply some power to it, in the form of a Dremel. I'm just wondering what Dremel bit I should use in conjunction with the Maas if I have just some minor scratches left, but want to get it shined all to hell.

Generally, a Dremel is too small to get a consistent finish. A larger buffing wheel is required. Concentrating your polishing in a small area, as with the Dremel, will leave a mottled finish.

That won't work well. The contact area is too small to give consistent results. You would be better off hand sanding the blade with very fine sandpaper, to 2000 grit, then hand polishing with a cloth and Maas.
A lot of people think the Dremel is good for polishing knives. They are good for small areas-like finger guards, but not for large areas. You can spot a Dremel blade job a mile away.
The Dremel is a very useful tool for many other things.
