Polishing

Anybody recommend something I can use to polish my stainless steel knives. It seems that it only takes a little handling of the knife before it loses the factory polish. I have different rouges and various micron diamond pastes. So any help would be appreciated.
 
I would suggest Flitz metal polish for a non cutting polish. If you're looking to put a mirror finish on a blade that did not come that way out of the factory, I suggest sandpaper in progressively higher grits. For finishing I suggest 3M 3000 grit Trizact, followed by the Flitz. I was able to strip the old coating and put a mirror finish on my old, beat up Cold Steel Recon 1 Ultra Lock using this process. Should I start with the 3000 grit. Also what about using my darex with my micro mesh 3000 grits. The blade is dull and I will work on sharpening after I polish it. Btw it's an old corn knife. I wanted to practice on it before I tried it on a more expensive knife. Thanks for the great pictures. That helps a lot.
 
A lot of guys use Flitz which I have and recommend! I haven't done it to a knife but I used some high grit wet/dry sandpaper with some Flitz on my 1911 barrel at the ejection port to shine it up and it worked wonderfully :)
 
Thanks for all of the replies. I am going today and get some flitz. Has anyone used a dremel with a small buffer wheel?
 
So I got the flitz and it doesn't come with much direction. So I'm guessing I just wipe it on and wipe it right back off. If anyone has a different way I would love to read about it. Thanks
 
Some people like to apply the polish and let it dry, then start buffing the polish on the blade. Re apply as needed
