I own both a Stainless Steel Poliwog and Sage 1!
I believe the sage is a bit lighter due to the CF and drilled out liners.
Both are extremely comfortable to hold, but with that said I feel the Sage has a bit more versatility for comfort of different grips. The Poliwog is very symmetrical so the handle tapers as it gets to the end giving you less to hold onto if you want to hold the knife farther back.
Really depends on what you want more because they really are 2 different knives.
SS Poliwog: Heavier [could go for the g10 variant of course], hollow ground blade, smaller blade, Ball Bearing Lock, Awesome ergos when held in normal grip with superior control of the smaller cutting edge, deep wire clip.
Sage 1: CF scales, Liner Lock, drilled out liners, jimping on ramp and finger choil, s30v FFG blade, Black anodized deep wire clip.
Personally I think the Sage is more of a normal/versatile edc vs. the Poliwog. The Poliwog is definitely a sweet knife to have in the collection. Like you said with time you can get both, but if you don't mind waiting on the Sage I'd get the SS Poliwog first since they are a bit harder to find if that's what you seek. I believe the g10 ones are still fairly abundant.
For the price I do think the Sage is an overall better buy.
