Pork lover's been burrito

Disclaimer, if you have a wife or girlfriend be prepared to sleep on the couch or possibly outside after these burritos.

What you need:
Bag of pinto beans
white onion
clove of garlic
fine ground chile or cayanne
whole dried chiles (I like guajillo)

Now the good part:
Smoked ham shanks
bacon

Cook like you would any other beens in crock pot for the day, adding ingrediants to taste. Heat up tortillas and serve with guac, sour cream, whatever you like.

I'll take some pics when they're done tonight.

I love working with the smoked ham shanks. In Lentil or pea soup they are excellent. I am going to have to try this over the weekend. (will give me time to air out before the work week starts:thumbup::D)

It just needs a little HOT SAUCE to make it complete!!
 
Being a single 150 lbs. male I have PLENTY to share.

Here's a shot of it from a few minutes ago. The shanks really make the flavor. Excuse the messy kitchen. Been cooking in there since this morning and have an hour or two to go.

This is basically my father's recipe with a few modifications. Mainly the smoked ham shanks and less bacon, and fresher ingredients. I guarantee you there's more animal product in one of these bean burritos than in a big mac.

Its one of the simplest things to make, you just need time. You have to have planned and prepped tonights dinner last night and you need the entire day to make it. Sure you can cut corners but its not anywhere near as good.
 
Looks great man, crock pots are amazing instruments, slow and steady, and make everything taste good :D
