Got my LeeValley Christmas catalog in the mail today and the back cover featured THESE:

Linky Thingy Here:

They are definitely interesting looking, but that handle doesn't really look as comfortable as they say. Does anyone have any experience with this design?

Do they think that little nub will stop your hand from sliding over the blade?

All joking aside, I have seen and held these, they are the same weight and design (IMO) to the global knives, but like most handles like this I think I want more meat on them... I guess I'm just a fan of German handles you can really get a grip on.

I don't think they are made from that 301 stainless. I have had one of the Santuko knives for about 3 years and it holds an edge better than my Shuns. The handle looks weird but, for me, it is very comfortable and surprisingly natural feeling.

The handles might be 301 because the knives are made of two different steels. Under the right light you can see the different grain structures where the blade and handle are bonded (welded) together.

No experience at all, but would guess the steel handles wouldn't be too comfortable (cold) to use, and perhaps a lot heavier than they really need to be. Such a heavy handle might make for an uncomfortable balance issue as well.

They're careful to point out in their description that it's not "Porsche (the auto guys)" that's designed the knives, but rather the grandson only. My guess is that a knife carrying the 'Porsche' auto logo would be far superior and cost at least three times as much as these, and would not be sale through Lee Valley.

They have a lot of cool stuff, but a lot of it is quite overpriced as well, compared to identical or similar items I've seen at brick and mortar places.

Or, they might be awesome knives at a great price... like I said, I haven't used them. Just making a supposition from the pictures.

Weird I just got the same book in with an order of grinding belts today and was checking out the same knives. They actually have a few nice kitchen and other knives but it bothers me they never have the steel type in the adds. The knife I have really had my eye on is the Laguiole folder from france. I have a set of their steak knives and have heard good things about them. They are also the only Canadian source for the Douk Douk.

I think if you want a good set of kitchen knives you would be better off with a company and knife that has had some reviews and history as well as a steel you are familier with.
I love my Sopyderco Yang knife in VG10.
