Possibly searching for a fixed blade for work/EDC

hey guys!

I've recently been contemplating a lot about a new knife I want to get for work and I hope i can get some advice.

Lately I've been thinking about getting a fixed blade because they're known to be a lot stronger than folders. I'm looking for something that can be beaten and abused and still hold up great. I know it's a cardinal sin, but maybe even using it as a pry-bar in a pinch. I work with a lot of meat, so I need something that can be easily cleaned as well as the sheath. I live in Texas, so my legal length is 5.5'' for the blade. I'm also left handed, so any help there would be awesome!

I've been eyeing the line of ESEE knives, but I'm worried about the micarta handle being food safe. I want to be able to take it out, rinse, wash, and sanitize it in the sink at work so it stays clean.
 
I'm carrying my 4 today. I put some blackwood scales on it. It was a fun process, and I think it looks a hundred times better.
But micarta washes up just fine with some soap and water.

ESEE 3 or 4. I would get without the paint if possible or strip it.

My current favorite is the Kabar Becker BK-15 which comes with a functional canvas sheath. Really like this knife. I'd probably strip the paint if I were using it around food much.

(My problem responding is that I am not sure if this is a traditional knife.)
 
I wasn't aware that ESEE fixed blades were considered traditional knives...I learn something new every day.
 
I only consider mine traditional since I changed the screw on micarta handles with some pinned wood and stripped the blade.
I could see the coated stock ones going either way but probably leaning more towards modern.
 
Just wanted to point out that Micarta only absorbs in the outer layers, the resin holding the layers together is waterproof so anything that hasn't had the resin removed is waterproof.

I'd got for one of these and get a kydex sheath made up for it if you were really concerned about sanitation:

I think this will do better in General Knife Discussion. The ESEE reference kind of pushes it in the direction.
 
Esee or one of the Izulas would work great. You can wash the hell out of those Micarta handles without any issue.
 
Becker BK-15, since it's only $40 right now you can get a couple on the off-chance you manage to break one. it's a great medium-size, good for everything and has top-notch quality at a hard-to-beat price.
 
I would also suggest JK Knives, but I would suggest his "Handy Kit". Or at least the knife from it scaled up to suit your size preference and a kydex sheath.
He works in O1, s30v, 154cm and one or two others.

Go custom, have John make you Your Knife, not one that will fit this role but was designed for everybody.

For factory produced, go with the bk15. It looks like a beefed up steak knife, but it is Fantastic. The BK5, 15, and 4 are my 3 favorite production knives. Too bad they are ending production. Get one before it goes the way of the dodo...

I really like my LT Wright nexgen was good price point for quality as far as using the knife as a pry bar to me wanting something that can cut meat and be used as a pry bar asking too much as even the best of knives prying can break a blade, 20+ years ago was an army LRSD platoon we had a little flexibility in our equipment I carried a traditional KaBar fighting knife that thing was a beast used to pry open drums ammo crates, chop branches for fires and cover

What I would recommend there are some EDC pry bars out there pocket sized check out county comm buy a nice knife and keep the pry bar for the rough work

i guess to clarify what i meant about working with meat was that the handle needs to be made of a food safe material that wont hold bacteria. im not cutting the meat with it. if i need the knife and im handling raw food, i need the handle to be sanitary.
