Potato peeler

What's the best potato peeler out there? I've been using my wife's steak knives (we lost the paring knife somewhere; probably our 7 y.o. ninja son...). Anyway, the steak knives aren't too sharp and peeling is a chore. So... Switch to a professional paring, peeling knife? Get on o' those fancy peelers?

What do you use and what works best?

I cut my potato into slices or chunks and forego peeling, but when I peel cucumbers, same technique needed, i found a Dozier Canoe and a Mission MPU worked well and a Helle Nying REALLY well. Whatever old commercial potato peeler you do get, touch it up on the Sharpmaker from time to time and it will restore the edge quite well.
 
I'll second the OXO--works very well, and the handle is much more comfortable and secure than the skeletal metal ones. Works great on ginger as well. Still, I usually like to leave the skins on; I enjoy the taste.
 
I second the Kyocera. I got one from KnifeCenter for my mom and now she won't use any other peeler. (Not just because I gave it to her.)
 
You can steam the patatos then rub em with a cloth to get the skin off. Food TV. Never tried it though.
 
Josie Dew, a UK professional cook and worldwide cycle tourist, recommends a Swiss Kuhn Rikon peeler.

She says "Lightweight, strong and sharp. Without a doubt the best peeler I've ever peeled with (and being a cook by trade, I've peeled with a few in my time). It's so good it even makes peeling 45kgs of potatoes a pleasurable experience."

I use the OXO peeler - it is far better than any other I have tried.

My brother is a professional chef and he scoffs at the use of any peeler - he uses a paring knife, holding the vegetable in his left hand, right thumb on the vegetable, fingers wrapped around the knife handle and drawing the blade towards himself by clenching the right hand. His technique is very similar to the cut I use in roughing out the shape of a piece of wood for whittling.

I won't ever have fun sharpening it. Pretty sure the wife would not be happy if I borrowed her diamond ring to sharpen it... ;)
