Powder coating and kitchen knives

I am thinking of making kitchen knives from High Carb steel, powder coating them and putting a clear acrylic powder coat over them for rust control. Will the powder coating stuff affect the food prep/taste or is it bad for the human body? You wouldnt be eatung the powder coating or anything, but it MAY rub off a tad over a long period of time...
 
I think you should make them from stainless instead. I worry about paint flaking off. There are plenty of high carbon kitchen knives that get cleaned and put away before they have a chance to rust. Ask my Grandmother. I know its not what you wanted to hear.
