whats your opinion of them ? Are they worth keeping around for emergencies ? Do they taste nasty or can they be nice ? Any one got some good recipes ?

I've had them before....they aren't horrible.....but they certainly aren't for cooking a gourmet meal either LOL. Eggbeaters I think they were called....not bad when one scrambled but a bit "wet."

I use them in Bannock mixes
I carry powered eggs backpacking along with powered milk
Combine them into pancake/bannock mix for very high protein

Just check where they are produced - make sure its not Yunan!

If you've seen the documentaries you would have seen the labs/factories where they produce fake eggs and egg yolks... pretty nasty! And that's coming from a guy who loves the food in China!

Ive tried powdered eggs and they weren't too bad, scrambled up they were a bit wet as mentioned above but quite edible flavour wise.

Source of food not source of pleasure.

In the way back a mate of mine brought about an lb of it on a trip with a view to make scrambled eggs. Short version, you have to add way more than you think. He added, and added, and added some more, and still ended up drinking it like an obnoxious milkshake.

The classic WW2 time recipe for it over here was to cookie cut a hole in a bit of bead, chuck that in a barely lubed pan, and pour the runny mix into the hole. It may have been better with more fat in the pan I guess, but they were on a ration.

Best used in baking.

I stopped using powdered eggs for anything when I found out that they have incredibly high levels of mercury. I'd recommend that you go with freeze dried - it's a much safer/healthier alternative.

Real eggs can be kept with some care for a reasonable amount of time. Powdered eggs aren't worth the cost and bother to me considering the end product.
