Hi all! I just got done reading the recently bumped threads about the utility of a (very?) obtuse microbevel and would like play along at home. What is the best way to establish such a bevel using my Edgepro Apex?
If it matters, the knives in question are a variety of kitchen knives (nice old forged ones and some more recent stamped ones) and my Spyderco Native in S30V.
Normally for all of these (after an initial reprofile at ~10*/side) I'll sharpen to the polish tape at the green angle (which I think is 15*/side). How far back down the grit scale should I go? (coarse? medium? fine?) What angle should I set the Apex at? Any idea how many passes I'd make to get the appropriate micro bevel? Am I looking for the classical burr formation when doing this?
Any insight appreciated!
