Primary and secondary bevels.

Just curious, how many of you sharpen your knives with primary and secondary bevels, and how many just go with a single bevel ?

If I'm going to sharpen to 30 degrees I'll go with a single bevel, but if I'm going for 40 degrees or more I'll put a secondary bevel in at 30.

Can you tell the difference in a single and double bevel ?
