well then how bout we do this
take whole filet
heavy on the salt and cracked pepper wrap in bacon lightly smoke till the core is 130. pull from smoker and roll it around in screaming hot cast iron to crisp the bacon
put on fancy carving board and serve to the guests. the ones that want the meat over done cn eat the ends (i ll take the center thanks much )
