sorry everybody noob here. i have established a burr on one side of my knife and then the other to make sure each side is fully apexed what is my next step to getting a hair plopping edge.

What are you using to sharpen ? You now need to work the burr off the edge, I have a WEPS so increasingly finer grits, alternating sides each stroke and finally strop the edge, have a search, there's so much info on sharpening here.

Use lighter and lighter pressure on the stone to remove the burr, when the burr is gone the knife will/should be very sharp. Sometimes a little stropping helps with the very last of the burr but most all should be removed on the stone.

Also check out the link to "The Burr" in knifenut1013's signature.

He's posted some very good information on all 3 of those links.

Raise the angle to about 40 degrees per side. Make one or 2 passes per side using very light pressure, less than the weight of the knife. This will remove the burr. Then make light alternating passes at the original angle to remove this tiny microbevel. Depending on the geometry of the edge, thick/thin etc. you should be able to remove the microbevel with 10 or 15 passes per side.
