Hi,
I ordered the WEPS @ the end of March and should get delivery start of May. I order the basic kit plus the extra fine/ultra fine stones and the 5/3.5 strops. I bought this device mainly to get my globals back to the sharpness of when I bought them. I remember when I bought them the pleasure to work with such a sharp knife is fantastic. I have king water stones(800/1200/8000) but could never achieve to get back the factory edge
So anyway, now I see that there are new chosera stones available in 800/1000 & 5000/10000. My question is.... would it be worth ordering these as well orwould the gain be minimal & it would be a waste of money??? occurred

You will be able to get your knives more than plenty sharp with the setup you ordered. Buy the Chosera stones only if you like the idea of working with water stones. You won't be able to put a better edge on your knife that what your current setup can do. Just take time to do it like Clay suggests, and also don't rush to the next stone before your current one has done all it can do to remove the scratches left by the coarser stone before it.

I suggest at the moment that the value of the Chosera Water Stones lies within you...if you are really into sharpening to absolute perfection and inside your head, your brain is screaming for the stones, then you should get them.
The true value of these stones may become more apparent when the new acute angle adjustment device for the WEPS arrives on the scene. For years the EP guys have been using these stones along with the Shaptons on superior chef knives making extremely acute edges on their rigs which from all accounts were the best in the world. There is every reason to believe the WEPS will make edges every bit as sharp/excellent/magical as the EP and more easily IMO with these same stones. The Shaptons will be along shortly and perhaps some other noteworthy sharpening stones. There is a great future lying ahead for sharpening in general and the WEPS in particular I believe.

But of course the old question still pops up...how sharp is sharp enough and when do you know you have it? It could drive one crazy yes?!

Best regards
Leo
