Quesions about edge tolerances..

Hello,

I'm no knife maker, but considering what I'd like to do I thought this forum appropriate. I just bought a production knife (ATS-34 steel), and require an absolute scalpel edge. I'm not concerned as much about edge durability.

My first question is, what are the limits of how sharp you can get a piece of steel? Secondly, how would you go about doing that?

From what I hear, the way to go is good Japanese wetstones. However, I wouldn't know how to distinguish a Japanese wetstone from a Bulgarian one. What kind of grits are we talking about to get that sever-the-silk-hankerchief-under-its-own-weight kind of edge?

What I would most appriciate is some sort of online knowledge base detailing technique, and the tools required... Second to that, any tips you guys could give me would be super.
