Can anyone give me any insight to this Hen&Rooster knife? What steel are they using? It's usually not a good sign when the don't give spacifics, but then again it is German Solingen steel. Also, what about Hen&Rooster as a company?

The Germans are quite capable of identifying a specific steel and will do so when it's worth talking about. Generic terms like Solingen steel or surgical steel are a bad sign. :)

I think Hen & Rooster was absorbed by Boker. And a couple of those knives look like Bokers I've seen. I would need a lot more information to want to pay the prices on those first two.

A.G. Russell, who at one time owned Hen & Rooster, says that the knives are now being made by Boker.

As for who owns the company, I think - I'm not sure - I think it may be one of the United brands at this time.
