Question about blade style and steel.

I recently adopted a baby boy. As a gift for the Birth mother and my son I am planning to have matching knives made. The mother fishes for Salmon (smokes and preserves it) and hunts extensivly. I am not sure if there is a single blade style that would be appropriate or if I should focus on one side or the other. Also I would like recommendations on a good steel, I keep thinking Stainless like AT34 or CM/CPM 154 (I would love to get a great Carbon blade, but am concerned about how it would used).
Also do you know someone who makes something like this that could produce a pair in less than a year. My budget would be around $800 for the pair. I would like something that is a great looking user that both will cherish. Steven
 
I personally would focus on one or the other. If you go for a knife that will work for both jobs, it will not likely do either job optimally.

A good place to pose this question would be the Shop Talk forum. That's where the makers hang out, and I am sure some of them would be able to help you.

I would suggest you visit www.Dozierknives.com. Bob Dozier makes some superb knives in D2 for outdoorspeople. How's that for PC. I think you could get two beautiful users and have change left over.
