I am currently working on my first kitchen knife, and was wondering how to store it safely when done. I've noticed that a lot of the Japanese style kitchen knives are being sold with a wooden sheath. I've been trying to find some threads on making these, but I cant seem to find any. I think I may be using the wrong terminology in my searches. I'm not sure what they are called. Can someone point me in the right direction?

I think the word you're looking for is "saya".
Some of the people I know that store kitchen knives use a strip of wood with magnets underneath to attach the knives to on a wall. (Hope that makes sense).
So the blade is touching the wood.

If you look in the stickies, Stacey has all the parts of a Japanese knife defined.

In kitchen knives it is called a "blade cover" or an "Edge Guard". They cost from $1 to $4, depending on the material and quality. A sheath is for carrying a knife, and a saya is the Japanese word for a fitted blade cover/sheath. Saya are normally made from a soft wood and should match the handle to some degree.

here are what they look like :

They come in a variety of sizes, black, or transparent and in colors so you can quickly pick a knife without removing it to look. You can grind the open end to shape it to fit the handle/ricasso of your knife. Most all kitchen stores sell them. Messermeister has really good rolls, cases, and covers.

I bought some 8" kydex ones for $3 a piece off amazon. They worked well but they will scratch the blade if it's not perfectly clean. These covered the whole blade. I also have have some request for leather sheaths from a few people so I got the fellow that made my sheaths to make me some leather ones. I really liked them and will continue to offer these with my knives. I sent them off Monday but will se if the fellow will send me a picture.

Kitchen Supply companies such as Korin retail generic sayas for about $25.
This is an example.

They are not overly difficult to make yourself. Many of the knife makers who specialize in kitchen knives make their own to match the knife handles.
