Question about mirror polishing/creating a texture on my knife

I made my own knife from a dull saw blade, however the thing is so hard its near impossible to hand grind it to anything. I tried mirror polishing it with sandpaper 150-220-500-1000-1500 and it doesnt really grind anything off, the finish thats on it now is from angle grinder.
Heres the saw blade:
Heres the knife: (i stone washed the knife before so i get that nice line after grinding with angle grinder)
Now my question is how do i mirror polish this thing or how do i create sorta like a texture on the upper part of blade.
Thanks

I have a low speed (1,750 RPM) bench grinder that would probably give you a mirror or near-mirror finish. Stiff buffing wheels with a series of coarser to finer compounds will do the heavy lifting. It is hard on crisp edges, but it looks like that won't be a problem on your blade.

Rikon came out with a variable speed model right after I bought mine. Mine only runs at the slow speed but that is not a problem, I'm not doing production work so if I need the ceramic wheel it still works, it is just a little slower and cooler than a typical 3,450 RPM grinder!

An even satin finish like in your second post can be accomplished with SC sandpaper wrapped over the edge of a sanding block. You drag the loaded edge across the surface in the direction you want the scratch pattern to run, keeping your strokes straight and consistent. The additional pressure created by using the edge or corner of the block rather than a flat surface helps the paper leave a neat, convincing satin finish in whatever pattern your choice of paper dictates. SC paper will work a lot better than AO on that old saw blade!

It's a little late to do anything. You have already put the handle on it.
Anything you do will look unfinished near the handle.
