Question about PID and toaster oven!

So I have an entire cart built on amazon to wire up a PID to my toaster oven. I’m a little nervous because I know knowing about electrical, and honestly my time is so limited these days that’s it’s just easier for me to buy something already built.

is there any reason this wouldn’t work? If not is there a pre-made solution that I could buy that would require limited setup?

well, for one thing, the operating temps for this unit as listed are -58 F to 257 F, which you will be (I hope) exceeding when tempering your blades.
Dang I thought I read differently. Is there something like that will support up to say 500 degrees? Or should I just pull the trigger on the amazon cart? Lol
 
Have you searched for and read the other threads on PID ovens and forges on the forum? I can only speak to the components I used on my build.
