question about shun Taiyo

so i know pretty much zero about kitchen knives in general but have decided to get my mother a nice kitchen knife, she has some higher end knives already and i was looking for some thing that would top what she already has(both visually and performance wise) i came across the Taiyo and man that thing is striking! but i have no idea what SG2 is like, nor what is best in the kitchen(grind,blade steel) so any information or suggestions you guys could give me would be very helpful :)

SG2 is a fantastic steel when heat treated correctly. Personally the Shun sounds right up your Mom's alley, now let's talk about what you need.
 
I've had the Shun Taiyo for a little over a month now and it's an absolutely fantastic knife. SG2 has really great edge retention and touches really easily when it needs to be sharpened. The Taiyo has a 16 degree angle on both sides, so it's probably best to use some kind of set angle sharpening system. I use the Wicked Edge and an angle cube to make sure it's consistent.
 
my father has a edge pro apex i gave him last year, and my mom has a set of DMT hones, the other two that i was told would be what i was looking for is a shun reserve and a shun Fuji, the place i had found the taiyo is now listing it as out of stock so i want to have a back up in case i cant track one down :), thanks for the info on the steel, will it require diamond stones to sharpen or is regular stones ok?

- I'm not sure. The Wicked Edge stones are all diamond. I've only used 600 grit and 800 grit on the SG2 to touch up the blade with a few strokes to keep it razor sharp.

Regular waterstones work just fine with SG2.
