Thanks, I do not know anything about 440C, how does it comapre to say S30V or VG-10? I like the look of some of the Katz knives but if the steel is sub standard, I think I may pass.
440C was premium stainless steel back in 80s if I am not mistaken. When properly heat treated it is still, or just as good as it was in 1980.
VG-10 and especially CPM S30V are more modern. So, when they are heat treated properly they perform better for many cutting applications.
To be fair, a lot of steels used in knifemaking today are also few decades or even older.
I personally don't consider 440C neither premium nor substandard. It's just an old steel, still ok performer. And you can find better and worse steels. I wouldn't pay premium price for a knife made from 440C.
One aspect is, the edge. There isn't much gain from latest hitech steel at 64+ hrc if one keeps 40 deg inclusive angle on it for utility uses.
