Question anout the edge pro diamond matrix plates

Was looking at the higher end steels and was wondering what grit to get. I have the shapton glass in 220, 500, 1000, 4000 and 8000. So if you were to get some, what grits would you get to compliment the shaptons?

I did a comparison between the Matrix stones and Shapton Glass in post #11 of this thread. Which grit depends on what you like but I would lean towards starting with the 650 and going finer from there as you buy more. Once you set your bevel you shouldn't need the 250 or 80 unless you like a coarse finish for bite. There is a pass-around kit if you wanted to try them all out and decide for yourself. The only cost is return shipping of a medium flat rate box with the USPS.
 
Another question if you don't mind. Is the 250 enough to set the bevel on the higher end steels? Is it too much of an set up to then go to the 1000 or is the 650 the way to go?

The 250 will set a bevel but it probably isn't the right stone for it as it may take a lot longer, just depends on how much metal you want to remove. Keep the pressure light, take your time and you won't have any problems with the stone wearing. I came up with the 80 grit to fill that void where the 250 isn't aggressive enough. You can make the jump from 250 to 1100 if your angles are perfect using 10-15 strokes on a 3" blade, but it is stretching it to the absolute limit of grit progression. I myself would rather use the 650 and do the last few strokes with no pressure to reduce the scratches left by the stone. The scratches won't be as fine as the 1100 but noticeably finer than a standard 650 scratch. I find I often start with the 650 when sharpening my work knives, the 1100 just isn't coarse enough for this initial sharpening IMO unless you use micro bevels.
