Question on Esse 6 and Becker 7 for food prep

Almost 5mm. It will work but its no kitchen knife. Its more of a wedge than a slicer. Lets say cutting sweet potatoes, its gonna cut then wedge itself tight.
 
I have a BK7, it's been stripped, hand sanded, and blued (at one point). I used it several times to cut a been tenderloin into filet mignon steaks, chopped up potatoes, carrots, celery, tomatoes, chilies, and other stuff to make stew and soup many times. I don't feel it functions as a wedge as it has a high flat grind rather than a saber grind. I don't own the esee 6 so I cannot comment on that one.
 
The 7 would probably be better for for prep, especially since it's creator knows his way around a kitchen, to put it mildly. I personally would think either would be fine for hacking away at meat and root veggies for stews and such.

I own both and have used them extensively as food prep knives, I can tell you the BK-7 kind of sucks for food prep mainly because of the grind and the fact that the guard interferes with most "off-the-chopping-block" kitchen work and there isn't much belly to compensate. The ESEE's guard is not in the way nearly as much as the 7's and the blade has a lot more belly to do that sort of work (thinner grind works to your advantage as well)
