On the deal of the day I see a lot of times where it says knive comes field sharp and i was just wondering how HI does their field sharpening, I'm sure they don't use the mouse pad method it would take way too long it wouldn't be cost effective what other methods of sharpening convex edge is there

I recently use the mouse pad method to sharpen up both of my kukris that I have and I was pretty impressed about my results and now they're saving sharp or back to factory sharp aka field sharp

Until somebody comes along who knows the definitive answers to your questions, I'll say what I think:

I think that "field sharp" implies that the edge would be good enough for chopping, but "shaving sharp" would require some more honing.

I think that a slack-belt sander is the usual way for convex edges to be atttained by manufacturers these days (whether on knives or axes), but I don't know if that's what HI kamis use.

Steve nailed it. Field sharp is a good working edge. With about 10-15 minutes with a strop and stone, you can make it razor sharp if you want.

The usual average person yes. bawanna, not so much. I seem to be sharpening challenged more and more every day.

My 1st kuk was shaving sharp out of the box but my 2nd had a slight burr nothing to complain about it gave me a reason to learn how to sharpen up both of my kukris and a great lesson in convex blades I still LOVE MY HI and can't wait to get my next HI blade curiosity got the cat I guess lol haha
