Question on Scotchbrite belt usage

I have a knife I want to make a brushed satin looking finish on
I am mixed up about the usage. I know you can blend the scratches
with them but I am unclear on doing the flats with them
do you just do the bevels(hollow grind)and then just come up over
the bevel and then do the flats also.I can only find them in fine and extra fine.thanks for any help.

I use the fine belt and do exactly what you've outlined, turns out fine--Dan
