My ex-employer has an old carbon-steel kitchen knife that he adores (it belonged to his grandmother, and its so _thin_ that it cuts better than anything else he's handled). Problem is, after decades of improper handling and dishwasher cycles, the wood scales have just about fallen apart, and the tang is badly rusted. Removing the old scales and rivets I can do, along with getting rid if the rust. Replacing the scales, though, is something I've never done. I'm trying to give the owner a couple of options, and a professional rehandling is one of them. So here's the question:
About how much could he expect to pay a knifemaker (preferably local to the North Jersey/New York area) to rehandle a tapered-full-tang knife? No fancy materials required. I'm gonna instruct him in the finer points of not-leaving-knives-to-soak and keeping-them-the-hell-away-from-the-dishwasher.
Thanks!
