Has anyone used the included sharpener on the seal strike deluxe sheath? Is it coarse, medium, or fine? Does it keep the blade factory sharp? I can’t find much info on it

I can't comment on the sharpener, as I am not a fan of SOG.

What I can say is that keeping the blade "factory sharp" is as much about your technique, as it is the stone(s) you use. Typically, you can make the edge MUCH better than the factory with good stones, patience, and good technique.

I will go out on a limb and say that the SOG stone is probably adequate for a quick, rough touch-up in the field, and probably not good for much more. Spend some time and learn about stones and techniques - it could be a forum all by itself.

The 'sharpener' is integrated into the sheath and is of the 'vee' type, which I would only use in a pinch, as it strips/rips the edge into being 'sharp'.

That's not any good. If you don't know how to sharpen knives invest in a lansky or a work sharp guided sharpening system. I always had a hard time sharpening, however I'm getting the hang of it with this guided system. My knives are sharp now. I always learned you're not supposed to use a pull through sharpener.

Oh by the way here's a picture of my sog. It was not abused when this happened. I was probing rotten wood from termites. I did not pry anything with it or do anything with it that should have broke like this. Luckily it's the only one of this brand that I own.

Sharpeners that come with sheaths, whether built in V-types or the more traditional stones in pocket are there to serve as quick on-site edge restorers when needed.
Routine maintenance sharpening shoud be done at home with whatever methods you prefer.
