Just a quick look at a folding ceramic kitchen knife from ACE.
Spec (from measurement and approximation no official data anywhere):
Closed Length: 9 3/4cm
Open Length: 18cm
Blade Length: 8cm
Cutting Edge: 7 3/4 cm
Blade Thickness:1mm (approximation, I don't have caliper)
Lock: None (a different kind of slipjoint)
Bought this as a novelty to try out how a ceramic knife performs, plus it's a folder, easy to store away. It's available as ACE's Kris kitchen utensils and cost only about 7$.
Initial sharpness: hair scraping (can scrape some hair from my arm, but not shaving smooth)
Used it several times to slice pizza (on the pizza box), opening up coffee/tea aluminium package, nothing heavy.
I found the grip to be comfortable, the tab that function as blade stop also works for one hand opening (similar to thumbstud), and the mechanism to hold the knife open/close is the handle slab has notch/milled to accept a protrution at the tang (both open and close). When half open, the handle slab is wedged by the tab at the tang, to spread open (see the half open photo) and this flexing force is what retain the blade open/close (compare to the full opened photo)
So far, it is able to hold the blade open/close properly (quite strong), stronger than a lock back but less stiff than SAK's main blade backspring. The blade will not open without a strong push (shaking it only will not do).
It'll be mostly doing kitchen duties at home, and if any significant update / experience, I'll update this thread. I don't expect anything significant, the edge being used lightly doesn't show any sign of wear and looking at a long service life.
