so........i'm slicing pizza with my randall model 15 airman and when i go to clean the blade it has substantial permanent staining where the blade touched the pizza. must be a chemical reaction, but does anyone have a clue as to why this happened? i'm not positive, but i think the blade is 440 stainless.

If the knife stained from pizza sauce I'm betting the blade is made from O-1 and not 440B. I've never seen any of the 440 (A,B, or C) stainless steels show immediate stains from slicing any type of food.
 
Does the knife show a big S next on the right side of the stamp? If so, it's stainless. If it doesn't have the S, than it's O-1. O-1 stains pretty quick around food stuffs, Stainless would have to be left for a few hours uncleaned in my experience, but pizza sauce could stain it.
 
I use my Randall model 3 all the time, love the look that comes with use on the O1 steel.
