I d like to ask here, what is the major difference between most common Stainless steels in comparison to one used by Randall manufacturer and what makes Randall's stainless special?

Randall uses 440-B. It is a good cutlery steel.

440-B is a medium Carbon steel. It's better for chopping than the high Carbon 440-C which is run at a higher hardness.
 
The stock removal, and some smaller forged models, use ATS-34
