IF you're uncomfortable with re-bevelling the edge, you might consider picking up an Aligner clamp from DMT. It will simplify the task of maintaining a consistent angle for you (which makes for a nice, consistent bevel). Can be used with your bench stone, or if you pick up a Magna-Guide kit (magnetic guide rod & Aligner clamp), it can also be used with your Dia-Fold hone, as the magnetic guide rod was specifically designed for the Dia-Folds. Assuming your bench hone is a relatively coarse one, I'd use it with the blade clamp to put the new bevel on the blade. Then use your Dia-Fold for touch-ups. Very short learning curve with the clamp, and can produce excellent results quickly.
Learning to freehand is always good, and I'd still encourage that. But, the above suggestion will help take care of your issue relatively quickly.
