Rat to eat..

ooookay....this is a bizzare question..how long should one boil rat before you eat it?

Ummmm...check out a recipe for squirrel. We have always called squirrel tree-rats. Same biological family (genus, not species?) I believe. Never tried rat, but fried squirrel (after par boiling) tastes great. Or, ask the French. They will eat anything. :D

If you were in a "survival" situation, wouldn't you just roast one on a stick over the flames???

I soak squirrel in a salt water solution over night. It takes out the gaminess. I'm guessing rat would be the same. Last Oct I got a Jackrabbit and a Squirell on opening day. Soaked both overnight, then covered in Olive oil, rolled in flour, Lowery's seasoning salt/pepper to taste, and fried up with onions, green peppers and mushrooms. Cook on low to med low, or you risk burning. Throw veggies in when you turn meat first time, or you will bern veggies to a crisp. MMMMMmmmmmmmmm!!!!! I'll bet with Rat you wouldn't know the difference.:D

I think Capybara....might be a bit of a challenge...

So each rodent has its own pculiarities....generally I would say...safe preparation of any meat means making it gray...by chemical(vinegar or tenderizer) or by heat....

I think the soaking thing is a good idea...as would be any type of marinade...

Immediate roasting...may concentrate any of the gamy flavors...

I wonder too...if a milk soak...like they use for some fish would help remove strong flavor...

Myself personally...I prefer garlic...rice wine...salt and pepper...and maybe a touch of rice...that's the way they do dog in the ROK...

I had the honor of knowing a Retired ROK Special Forces Captain who ran his own company of ROK Tigers in Vietnam....he told me once of being left in the field without resupply for an extended time. His men foraged for manioc and whatever alse they could eat...seriously tough men...rat was a part of their diet...I don't guss they had the luxury of time to prepare their meals...but I will bet you...they were hungry enough that whatever they had tasted like fillet mignon and a bottle of dom....

The Dog recipe sound's better than what I ate in Southern China.. kinda sweet and bland..hot sauce to the rescue:) Worked with ROK's in Quang Trie an Que Non really hard corps men.

In all seriousness, I truly think you should cook it like squirrel.

I believe it is 5 minutes at a brisk boil. The rat should be opened and gutted. You should check the meat for completeness of cooking when done.

I would roast capybara...size of a small dog....maybe a large one!
