I'm used to much thicker blades with either full-height (or mostly full anyway) convex edges or saber/flat/hollow grinds with secondary v-bevels. These thinner, shorter overall traditionals are a bit different.
So my 55 came with a pretty bad edge to be honest. But the knife is basically perfection in every other way so I decided I'd just reprofile it and set my own bevel. I used my Edge Pro and went with a 15 degree per side angle. I just used the 400 stone that came with it and it only took a few minutes before the bevel was set.
A few swipes on the sharpmaker's stones (both sets) and it's shaving sharp.
Wow, this 1095 is crazy easy to sharpen. Anyone know what it's hardened to? I know Case runs their CV really soft. I sure hope GEC doesn't. I don't mind sharpening, but some of the modern steels like M390 and CPM-3V have really spoiled me with how long they stay sharp.
