Thanks for the idea of a "stationary slack belt". This technique should work nicely with convex edges. Eventually, all of them will be using a slack belt.

Think I will actually make a rig to hold the belt so all I cut is the dowel holding the bottom of the belt, should I miss.

This is a good idea as drawing a freshly sharpened knife with heavy force across your hand or leg is probably not a great idea. You can simply go really low tech and use a piece of heavy rope as a makeshift handle.
