Try this: pick your favorite knife or knives, or multi tool, or just whatever you think is a good candidate, and use that and that only for everything you for a predetermined period of time, preferably over an active weekend. By everything, I mean everything -- if you want to use a fork, make the fork. If you want to shave, use your knife. And so forth. Simply cooking and eating a meal with one tool as a basic resource can be very enlightening.

I think it's great advice. Every knife I own has been used exactly as you are recommending. Especially the convex ground BRKT NorthStar. I used it to it's fullest just so I could try my hand at sharpening the blade. Easy as pie. Anyways, using a knife is the only way to become friends with it. The more we use it, the better we get with it.

Yes, use of your knife over a wide range of tasks is essential to determining what scope of work it is capable of and builds fundamental skills. With that said, I will stick to my Mach3 for shaving.

The best way to "test" your knife is to use it. A knife intended for extreme use, i.e. hard outdoors use, military, SAR, LEO, etc, should be tested very extensively to make sure it has the needed performance and durability. When Mr. Murphy comes knocking on your door is that worst time to discover that your knife has a faulty heat treat or was not constructed properly.
