Really Nice Knives - You never use

OK, I made a vow to actually try and use more of my knives. So I tried the David Boye dendritic cobalt dive knife to chop up the last bunch of carrots.

Which it did, but the profile was really thick and tended to pop the carrots all over the place. And previously I tried slicing up boxes but it tended to bind. So, I have this really nice knife that I love, but I'm not sure what to use it for.

Anyone else have similar situations?
