Sorry about the sub-standard pics. All I have is my iPhone as I can't find my camera.

First up is a knife born out of envy. Vince (VCM3) has posted multiple pictures of a slicer that was made for him by Tony Bose. I've wanted one since the first time I've seen it. I asked my friend and knife maker Kerry Hampton to make me one. Being that Kerry builds his knives in the same shop as Tony it seemed to be a logical choice :).

I would classify this knife as something in between a boning knife and a fillet knife. It functions very well as a general kitchen slicer but also handles boning and fillet tasks with ease. The knife has a 6.5 inch blade of 154cm at about 61-62 RC with a handle of green canvas micarta. I simply love this knife and it gets a lot of use.

I grabbed a used Shun MH-0706 off the bay at a nice price. The knife arrived pretty beat up. It has been used and sharpened a bit and has a thick shoulder above the edge that isn't doing anything for performance. The water stones are soaking in the sink right now and this one will get thinned out and sharpened today. This is an 8 inch chef's knife with a VG–10 steel core clad with 32 layers of SUS410 high-carbon stainless steel. This line of Shun knives has a solid stainless steel handle and is NSF approved. Being that the handle is solid metal it is a bit handle heavy compared to the same Shun with a Pakkawood handle.

This is another 8 inch chef's knife. A Boker with a blade of 37 Layer Damascus with a VG-10 Core. The handle is laminated wood.

Next up is a small santoku from the Henckels Miyabi 5000S line. This is a nice little knife. Very thin and light. This knife arrived very sharp. My only initial complains about this knife is the edge angle is ground different on each respective side. One side has a much steeper angle. No biggie...I'll fix that. My other issue is the diameter of the handle. It feels very thin. I've never used a knife with a handle this thin before. I handed it to my wife and immediately liked it as she has small hands. This is a well made knife and I look forward to trying it out.

My last one for this thread was a spontaneous purchase off the big auction site after quite a few adult beverages. This is manufactered in Taiwan. The blade is reported to be VG-10. It was listed as a "Japanese Santoku Vegetable Cleaver Chopping Chef Knife." I loved the blade shape and bought it. So far I have to say I'm impressed. For the price it is an excellent value....very comfortable to use. It came very sharp, well packaged and will certainly see some use.

I have a Shun Premier santoku and an ultra thin santoku coming from Ban shortly. I'll post pics when they get here.
