Recipe for Freedom Fries!

Ingredients:
- Large Yams or Sweet Potatoes (number to match the diners)
- Extra Virgin Olive oil
- Parchment Paper
- T.Bose ''Lil' Dumplin's Tater Peeler" (preferrably in CPM-154 with Ebony Handles).

Peel, and cut potatoes into 3/8" by 3/8" strips. Brush with olive oil, and spread on cookie sheets lined with parchment paper. Bake in hot/pre-heated oven ~ 425 - 450 degrees. Turn once or twice, keeping them un-layered as much as possible.
Don't burn them, but make them well done.
Just a little salt and pepper (and a little sprinkle of malt vinegar if you are Canadian!)
Yum!

No potatoes tonight, but tomorrow for sure. Tonight it's veggie kabobs and chicken breasts, on the grill, with a frosty mug of Extra Special Bitter!
My wife is working full time, keeping me in the manner to which I am accustomed!
Least I can do is have a little dinner ready for her when she comes home!;)

Jake, I've been known to post potatoes before! Here's a detailing knife Tony sent me a few years ago, and the first potato I cut with it!:D

Judging by the size of those yams, your scanner has an impressive depth of field. I've only scanned Yukon gold. Nice tribute potato too! :D

In Quebec mostly, like Waynorth said. And we still call the regular ones french fries. That's the first time I've ever heard a Canadian utter the term freedom fries without a chuckle (or one of these :rolleyes:). Hey, I'm WITH you guys down south (no Axis of Evil supporter here), I just don't mix my politics with my junk food fix.
 
I was just havin' fun with Charlie. And I think Charlie used "freedom fries" light heartedly.

Although I'm not a fan of gravy (the phrase "it's all gravy from here" is lost on me), I'll definitely give poutine a try when in Quebec.
 
i'm am very fond of sweet tater fries, french or otherwise.
there is a place up in Montreal where gravy of pork fat is poured over the fries, sounds good to me
i keep a lid on a small pot of oil on the stove so i'm always ready to fry, at be da Cajun in me we guess, yes.... no?
