On mid-winter vacation this week from school (high school history teacher) and I always enjoy getting my cook on when I have the time. My fiance was watching Rachel Ray (the one with the sort of hot raspy/smokers voice) the other day and got a great recipe if you like french onion soup and pork loin, so I thought I'd share
Its French Onion Pork Soup. Oink.
Almost too easy to make, basically all you need is a crock pot and time:
Ingredients:
3-4 lbs of pork loin
1 large sweet onion
pepper
salt
2 cans of french onion soup - I used progresso brand, but I dont think it matters.
chicken broth
if you want to make it more a meal you can add:
carrots chopped
celery chopped
small red potatoes (quartered)
Steps:
1. Put the pork in the slow cooker/crock pot
2. Add 2 cans of french onion soup
3. Fill the pot up with chicken broth until pork is covered
4. Add chopped onion
5. Add pepper and salt to taste
Cook on low for 8 hours. When you mix it up later the pork loin should fall apart into the soup.
If you want to add veggies/starch and make it a bit more of a hearty soup - after the 8 hours add celery, carrots and quartered red potatoes to your liking and cook on high for 2 more hours.
Boom you are done - just made is yesterday and enjoying it now for lunch - it rocks!!!
