Recipes for apples

Hey guys, I have a crap load of apples (i have all kinds, so i dont know what all i have in the pantry) that i need to be cooking with.

Let me tell you my strengths real quick: simple, i can bake. I am really good at making sweet, yummy deserts.

now the weakness: i can cook, but only enough to get by. Not that great with things from scratch. far better at baking

that said, what do you guys have up your sleaves in terms of apple recipes? Just remember that I have more things to use for baking, not cooking.

What i already have on the menu: apple pie. lots of apple pie. lol

what i wouldnt mind trying: breads, i need a good recipe for cobbler (i already love the stuff, but need a good recipe), and any good pies.

soo, what do you guys like and feel like passing on for me to try out?

I love apple crumble myself, hot from the oven and drowned in custard.

You could add some raisins for a change or miss out the cinnamon and and some fruit like blackberries. Mmm!

If the apples are a fair size you could make baked apples: Core them and fill the space with raisins, spices and sugar, then stick them in the oven.

If you want to be adventurous you could try Tarte Tatin.

I am surprised no one recommend sliced baked apples. Not sure about coring them but wow that sounds good:p Anyway how I do them is slice them up and mix them with butter, cinnamon, brown sugar, raisins, and maybe walnuts. Then bake them in the oven in a covered glass dish until soft (at least 2 hours on low heat).
 
Don't forget apple dumplings,sorry I don't have a recipe,but they're one of my favorite apple dishes.
 
my grandmother makes this one for me.
You take the apples wash them core them and put about 6 on a deep baking dish. I use oatmeal mix. The premixed packets are ideal for making this process easy. I typically cinnamon/sugar oatmeal and fill the hole where the core used to be and then sprinkle cinnamon sugar on the top and put a pad of butter on top and then bake (round 350) them until you can easily pierce them with a fork. Served with ice cream finished it off.
 
1 8oz. tumbler
1 ice-cube (optional... only for wusses)
4 oz. Four Roses small batch bourbon
1 apple

Take tumbler, add ice-cube if you wear a skirt, pour bourbon, put apple back in fridge, drink bourbon.
