The design of your knife is identical to the knife pictured below. The knife below is identified as a "UZI-FDR-Combo".
In regards to your missing pivot screw, it's a safe bet that your knife was made in Asia, likely China, and so it's more than likely a metric size screw. It's possible you might find the right size at a hardware store.

Worst case scenario is you just have to buy the new knife that

pictured above. You get a new knife all together, or if you like your stainless one better just rob the pivot screw out and put it in your old one.
Don't usually recommend buying knives on ebay, but i couldnt find one in stock anywhere else, and for a cheaper knife such as this I'm sure it'd be fine. Found one on there listed for $25 bucks..
