benchmade bone collector 15005. ive used it for a few seasons now and it has been great. stays sharp for a very long time. used it to field dress a deer and quarter an elk this past season and it held up great. held a fantastic edge also. even after those two animals it still is very sharp. highly recommend it.
 
My personal favorite is the Spyderco Moran drop point for field chores and something a bit larger for processing. I take a larger "knife" (for me usually a short machete these days) with me scouting as I may be doing a little bush wacking here and there.

Buck 110's (or similar) have been used for years for this purpose.

KaBar Becker BK-16 is another competent choice.
 
Just from looking on amazon and focusing on something thin enough for gutting a deer or elk, im looking at the ontario line up of the tak 1 or the rat 5 but the rat is wider which may make it harder when cutting out the rectum of the animal. For that reason im leaning towards the ontario sk5 since it is thinner and has a spear point. But it is 154cm steel instead of 1095, i dont know if that makes a difference. Im also looking at the esee 4. I like micarta grips
 
Before i knew anything about knives, anything i needed to do hunting i did with a buck 110, and a old USA made schrade sharpfinger. I was fine and needed nothing else. The tak 1 is carbon steel, so if you take the coating off, it will patina, or rust if you dont take care of it. But i have never had a Ontario knife, so i cant comment on them.

I know quite a bit about knives and have tried many, more than most and the Sharpfinger is my go-to knife still. In fact I keep a spare or two. Ok, 30 or more.
