Recommend steak knives

Recently decided my steak knife situation is no longer tolerable. I need 9 or 10 knives, so price is a consideration (in other words the ken onions and top line henkle and wusthoff are out unless i find a killer deal). Is there anything interesting out there?
 
I don't know of a brand but here's a tip, don't get serrated knives instead get single edge ones that you can resharpen when needed. Reason being is a cleaner cut into the food thus you tear it apart less keeping the juices in and also they can be given razor sharp edges thus leading to an easier cut.
Also single edge knives since they are easy to touch up can cause you to get some cheap ones that look good. Which you can touch up for better performance, Assuming you have a knife sharper.
 
I have a set of Victorinox Forschner (Swiss Army) that are awesome and the price is right. They are razor sharp and cut paper like crazy.
 
I couldn't tell if those Victorinox blades are serrated or not. I'll need to look closer. What I'd really like is a set of 1095 scadi-ground blades. I wonder if any of our custom makers have ever thought about steak knives.
 
I'm sure some custom guys make steak knives since it's an easy market, but one I remember not of here from a shop called razors edge was like I think 100 per knife thou that was just a mentioning of it. Customs will vary and I'm guessing so will there pricing, so I'd use them as a last resort unless you got money to send.
 
Ah so you want 1095, scandi ground plain edge? Hmm...Old Hickory steak knives might fit the bill somewhat closely, but they aren't scandi ground. How about a set of Moras? They are available in nonstainless steel, scandi ground and plain edge. Also most models are under $10 each.
 
Mora knives? That's an interesting suggestion.

Well you want 1095 plain edge and scandi ground...I don't think I've seen a set of steak knives with those characteristics. If you wanted 1095 flat ground plain edge I'd say get Opinel paring knives. That's what I use for steak knives.
