Recommendation please? Plain edge kitchen knives in good steels

Still not sure why most kitchen knife sets are serrated, but I would appreciate a recommendation for a plain edge single knife or set for a christmas gift.

I would prefer it be in something nice like 154cm but don't want to break the bank over $100.

Otherwise, just a single knife for peeling with a good steel.

Victorinox has kitchen knives but they just advertise it as "high-carbon stainless steel" which makes me raise an eyebrow.

I went with an Al Mar Ultra-Chef 8 inch, you can get a 6" for 103 bucks from this site. there sweet knives in VG-10 with cocobolo

It had great fit and finish, I'm impressed with Al Mar now. My next kitchen knife is in the same line but of different shape:

Those Al Mars look really nice. If you look around you can find some Kanetsune kitchen knives with a VG-10 core for under $100.
 
The Victorinox ones are supposed to be one of the best at the very low price range. For something better, Shun makes some amazing knives.
 
I have 2 sets of cold steels kitchen set and I love'em. They cut great, handles are very comfortable, hold a good edge and are easy to sharpen. Price new on secondary market 120.00. IMO 100.00 is pretty low if you want a 154cm kitchen knife or any very-high quality kitchen knife.

BTW I love that show. It's great instruction for unskilled goons like myself.
 
I bought some Shun Classic knives last year for my wife and she has been very pleased. They maintain a great edge and she has run the paring knife through the dishwasher with no problems. PM me if you want a recommended seller. The "deal spotting" rules prohibit me posting it here.
