I only have one HG knife so:
Looking for a 3" to 3 1/4" blade.
Thin grind.
Very sharp.

Any recommendations?

One of the sharpest HG blades I've ever gotten was a $25 KaBar Dozier folder. AUS8 takes a wicked edge and the KaBar's blade is fairly thin, at least by comparison with many of today's folders. It's also a great value. Very sturdy, solid and dependable backlock, light weight.

Other than that, I'd say "expand" your parameters just a bit and get a Spyderco Gayle Bradley. That's probably the premier prodco HG folder on the market right now.

Kershaw Skyline. 3.125" blade (3" cutting edge), 0.08" (2mm) thick. High hollow grind, and the Sandvik 14C28N steel will take a very fine edge.

The KaBar Dozier Folding Hunter is a bit thicker (0.1", or 2.5mm thick blade). The Buck Vantage Large is also the 0.1" (2.5mm) thick. The Gayle Bradley is 0.12" (3mm) thick.

Well, the full size Griptilian 550HG is a little too big at 3.45" and the Mini Griptilian 555HG is a little small at 2.91".

Both are nice.

Here's my Mini with Wilkins scales.

Lionsteel Opera... can be had with 2.91 or 3.54" blade in D2 tool steel, with G10 or Wood scales.

I'll second the Buck Vantage, mine has outstanding geometry. The Skyline isn't too bad either.

A step up in price will get the Spyderco Gayle Bradley, which is also a great knife.
