The Kershaw Chive is a very nice Gentleman's folder. It looks great, and the assited open has a nice wow factor.
 
Large folder: BM 806. (or another axis) Trust me, it may seem kind of expensive right now, but you will not regret it.
 
large fixed: BK-9... great value in a pretty darn good knife. I'm sure others will chime in with Swamp Rat models too.

large folder: Camillus CUDA Maxx 5.5.... can find for decent price on secondary market, or probably around $130-150 from reputable online source.

Khukri: go visit the Himalayan imports forum here... too many to mention, but a WWII 16.5" sounds like a do it all khuk to me.

If you want a khukuri, my recommendation is to get it from Himalayan Imports: handmade in Nepal in a huge variety of standard models to choose from - different styles, lighter/heavier versions, and your choice of wood or horn handles. And backed by 'Uncle' Bill Martino's ironclad guarantee. If you are on a budget look for the special deals that come up every week or so.

William Henry makes awesome gents knives, it's their specialty. The carbon fiber models can be had for about $150, and worth every penny IMO. Benchmade has a few nice classy models for reasonable prices, like the Benchmite. HI is the only way to go for a khukuri, check out the forum and keep your eyes peeled for the specials. They almost give 'em away sometimes.

Benchmade is still king of the affordable production butterfly, even though you only have one blade profile to choose from anymore. :grumpy: The Spyderfly will add some variety to the market when it comes out; when that will be remains to be seen. The Knifekits Typhoon is very nice too, for around $70 unassembled. Don't waste your money on anything that retails for less than $50; they're not only ugly they're dangerous. Balisongs are one of the few classes of knives where it's truly worth the money to spend more than $100.

The rest of your categories could be filled by any number of quality knives; Benchmade, Spyderco and Camillus all make great large and small folders, Busse, Swamp Rat, and Becker (a subdivision of Camillus) all have great large fixed blades. Hang around here and surf some of the bigger online outlets like New Graham and Knifecenter and you're sure to find something to your liking. Happy Hunting! :)
 
The short answer for Butterfly Knife is the BM42. The long answer follows along the lines of RoadRunner's statements. If you're looking for something collectible, then you can try hunting down a different blade profile (43, 46, 47, 49, 31, etc.). If you want something to play with now, then go with the 42. Oops, missed the buttefly knife category. Definitely a Benchmade 42. A 43 would be really nice too, but they are getting hard to find.
 
If you want to go custom, I recommend these makers: Brian Geyer; A. T. Barr; and P.J. Tomes for gents folders. I also recommend Michael Obenauf and Charles Marlowe for larger or tactical folders. All of the custom makers that I mentioned are very reasonably priced as far as customs go.
