Red pick bone question

Typically the shin bone of South American cattle dyed and jigged. Picked bone is a jigging pattern that usually indicates a scooping type pattern rather than other patterns that might have longer grooves or short wavy lines. There are all kinds of jigging patterns, one even named after a corn cob. Others by companies that introduced or used them quite a bit (i.e. Rogers bone).

To add a little more.
To my knowledge the commercial source for the bone for the larger U.S. factories is bone from South America.

The source of bone for custom makers is quite varied. Some makers start from scratch getting bone from whatever source and dying and jigging it themselves (Ken Erickson and Ken Coats come immediately to mind, but I am sure there are others.) Others may buy it directly from knife supply houses pre slabbed and already jigged and dyed or do it themselves also depending upon the look they want to achieve.

you're just being modest bastid. it takes someone pretty smart to deal with a bunch of unruly goats ;):D
