I've got a little folder in whose blade is in 440 Stainless, it's my "i don't really care about this knife it was so cheap" knife. I'd like to try refinishing the blade.

How feasible would it be to take it from it's current "matte" finish to a mirror-like polish?

Feasible and very do-able, if you have the sand paper to do it with.
There are numerous threads on polishing by hand , do some searching and you'll have lotsa reading.

In a nutshell though you need several grades of paper ranging from maybe 300 on up to how fine you want it , maybe 2000 grit , then some polishing with perhaps Flitz.

Thought I'd toss in , best way to polish is to go in opposing directions , i.e.
polish to and from you for a while , then side to side for a while then switching back.
Of course be careful around the blade so as to not disembowel yourself :D and bear in mind your finished blade will be duller than Ted Kennedy's humor so be prepared to do some sharpening.

Sharpening you say? Oh what a shame :-D I think I'm giving this a try tonight, I'll see if I can post some pictures of the finished product.
