I have an older Hubertus with dark maroon micarta scales which have been beat up a bit.
Is there any good way of removing scratches and polishing micarta?
Thanks for any info you can give me.

Ask this over in "shop talk" and you'll get a lot more useful info.

First try buffing the micarta. I have 2 buffing wheels which i stick in my drill press, one with green rouge and the other with white wchich is a finer compound. Hang on to your knife with a death grip, and wear a respirator or get one of them dentist liek masks at a hardware store (buffing compound isn't very good for you.)

If the scratches are still there, some 400 grit paper and water has always worked for me. Sand until scratches are gone and then buff.

A quick way that works is to sand out the scratches with 400 or 600 grit paper then polish with a very fine steel wool. Just figured I'd offer this in case you don't have machines available.
